Feeling Blue About Gas: While gas stoves might be super for sautéing, research indicates they aren’t great for your health. A recent study from Stanford University has found that if Americans switched to electric stoves they could lower exposure to harmful nitrogen dioxide (NO2) — a gas linked to asthma, cancer, and other health issues — by about 50%

The Study: The researchers determined the origins of NO2 pollution through nationwide data on indoor and outdoor air quality, 133 million residential buildings, and household behavior. They created maps depicting NO2 exposure by ZIP code and found 22 million Americans living in smaller homes and in rural areas were exposed to higher than normal levels of NO2 from gas stoves. Total NO2 exposure was higher in cities, however, from outdoor pollutants.

The Takeaway: If you cook with gas, you’re often breathing in as much NO2 as all other outdoor sources combined, the researchers say. That gas doesn’t dissipate as soon as the burners are switched off, but can linger in the air for hours afterward

Keep In Mind: Replacing a stove isn’t feasible for everyone, but you can reduce exposure by limiting usage (like using an electric tea kettle) and ventilating during cooking with a hood or open window.
